Making quick and easy low carb, keto recipes are essential being a busy mother of three adult children, two boys and a girl. Now that they have all left the ‘ nest’, I am free to do what I love, including test baking and investigating the science of quick and easy, low carb, keto, whole food recipes.
My mother was a very good cook and I enjoyed helping her in the kitchen. I nearly drove her mad by changing and experimenting with the original recipe. We grew some of our own vegetables and home cooked meals were the norm. There was always plenty of food in the house in order to feed the large appetites of my three brothers and dessert after every meal was standard.
Sugar played a part, although, we did not have the processed food available like we have today. The tins were always full of baking and our treat was fish and chips once a week on Friday.
Even then, I avoided the chips, ate the fish and left the batter behind. I am very aware of how food made me feel and how it resulted in the pounds creeping on.
Low Fat Message – Unfortunately
The ‘Low Fat Message’ has been around for most of my life. For this reason, I was always conscious to avoid or keep fat to a minimum.
I trained as a Registered Nurse to pursue my knowledge of health and wellbeing.
However, wanting to learn more, I started a Science degree to become a dietitian by correspondence when the children were older. Not to mention, this was going to take a while part-time, so I changed course and completed a Post Grad dipBus.
In spite of trying to keep slim through the ‘Low Fat’ diet and eating carbohydrates as per the guidelines, I gained a little weight after having children. The pounds were becoming harder to keep off and I felt hungry. Maybe this is the way it is, gradually gaining weight as we get older.
Like many, I tried a variety of diets that appeared in magazines, however, the Atkins Diet and the Zone Diet appealed as they were the most satiating.
A friend had told us about a book called ‘Pure White and Deadly’, written by John Rudkin in 1972. Unbeknown to me at that time, he was Ancel Keys opponent.
A few years ago I came across a book called ‘What the Fat’, written by Dr Caryn Zinn and Prof Grant Schofield. This was exactly what I had been searching for. In other words, the low carb diet had made so much sense and as a result, the low-fat era is history for me.
The low carb way of eating has become a passion of mine.
